Buena Park is one of the easiest cities we serve: wide streets, driveways for the chef's truck, and side gates that clear our grill cart. The one thing to check is the patio cover; most are lower than the 10 ft the grill needs, so the chef cooks just beyond its edge and the table stays underneath.

Summer evenings are warm here and a 6 or 7 pm start works well from June through September; Sunday afternoon parties are popular the rest of the year. We need a flat area about the size of a king-size bed on concrete or packed ground, and we bring a mat for anything else.

Lobster tail: Wild-caught Caribbean spiny lobster. Our premium upgrade. Wild-caught, not farmed.

Sauces: Terry Ho’s yum yum sauce and Japanese ginger dressing. The ones you already recognise from the restaurant. Both contain egg.

Allergies: Our standard soy sauce is not gluten free, so a gluten-free guest should have their own gluten-free soy and teriyaki on hand and we'll cook their portion with it. We can't promise a nut- or sesame-free table — the sauces and gyoza are commercial products, the gyoza contain sesame, and one sauce is made in a plant that also handles peanuts. Tell us the allergy when you book and we'll check the labels in use for your date.

Quinceañeras & Big Birthdays. Thirty guests on a Saturday evening is a normal booking here. The show gives the night a centerpiece without renting a hall.

Korean & Latino Family Dinners. Every guest picks their own two proteins, cooked to order, so a table with different tastes and diets still eats together at once.

Graduations. Buena Park, Kennedy, and Sunny Hills families in June, with relatives in from out of town and a yard that finally gets used.

Block-Wall Tract Backyards. The 1960s houses around Knott's have fenced, level yards with a poured patio. The walls keep the wind off, the grill sits on the concrete, and twenty-five guests fit without touching the lawn.

Los Coyotes & Bellehurst Lots. Larger properties near the country club with pool decks and room for forty. Among the easiest setups in north Orange County.

Covered Patios in La Palma & Cypress. Most covers sit below the 10 ft of clearance the grill needs, so the chef sets up just past the cover's edge and your guests stay under it in the shade.

Buena Park families host big and host often. The block-wall backyards of the tracts around Knott's, the larger lots near Los Coyotes, and the covered patios of La Palma and Cypress all fill up on Saturdays with cousins, church friends, and neighbors. A chef cooking steak, shrimp, and fried rice in front of thirty people is the easiest way to feed that crowd well.
